Spaghetti Carbonara
Ingredients

7 ounces spaghetti
-
2 tablespoons extra virgin olive oil

3 slices cooked bacon, cut in small pieces

2 eggs, beaten
-
1/2 cup Parmesan cheese
-
freshly ground black pepper

Directions

Cook pasta al dente in salted water; drain pasta and reserve some of the liquid.

In a frying pan heat oil and cook bacon until crisp.

Whisk eggs, cheese and pepper in a bowl; set aside.

Add pasta and stir to coat well.

Remove from heat, allow to cool slightly; add the egg and cheese mixture.
-
Stir to coat pasta, add a splash of reserved pasta liquid if necessary to obtain the desired consistency.

Serve immediately.
