Spaghetti Carbonara

Ingredients

  • 7 ounces spaghetti

  • 2 tablespoons extra virgin olive oil

  • 3 slices cooked bacon, cut in small pieces

  • 2 eggs, beaten

  • 1/2 cup Parmesan cheese

  • freshly ground black pepper

Directions

  1. Cook pasta al dente in salted water; drain pasta and reserve some of the liquid. 

  2. In a frying pan heat oil and cook bacon until crisp.

  3. Whisk eggs, cheese and pepper in a bowl; set aside.

  4. Add pasta and stir to coat well.

  5. Remove from heat, allow to cool slightly; add the egg and cheese mixture.

  6. Stir to coat pasta, add a splash of reserved pasta liquid if necessary to obtain the desired consistency.

  7. Serve immediately.
