Terri's Favorite Yams

Ingredients

  • 5 medium sweet potatoes

  • 1 stick unsalted butter

  • 1 1/4 cup light brown sugar, packed

  • 1/2 cup granulated sugar

  • 1/4 teaspoon salt

  • 1 1/2 teaspoon ground cinnamon

  • 1 1/2 teaspoon ground nutmeg

  • 1 tablespoon pure vanilla extract

  • 1/2 cup evaporated milk

Directions

  1. Preheat oven to 375°.  Spray a 13x9-inch baking pan with cooking spray.

  2. Clean sweet potatoes and put in a large stock pot filled  with cold water; cover and bring to a boil.  Cook potatoes until fork tender, about 25-30 minutes; drain potatoes and run cold water over them to cool and stop cooking. Set potatoes aside to cool.

  3. Peel and slice sweet potatoes (about 2-inch thickness).  Layer the yams in baking pan;  Sprinkle 1/2 teaspoon of cinnamon and 1/2 teaspoon of nutmeg over potatoes.

  4. Melt the butter in a sauce pan on medium temperature; add both sugars and stir to combine.

  5. Add the remaining ingredients except the milk; let the sugar mixture come to a boil.  Slowly pour in the milk and stir until sugar mixture thickens. The sauce will resemble caramel sauce when it thickens. (Use a small spoon to taste sugar mixture to make sure it's sweet enough).

  6. Pour sauce over the sweet potatoes; shake pan to make sure all potatoes are coated.  Bake 45 minutes until sauce has thickened.

  7. Remove from oven to cool.
