
Terri's Favorite Yams
Ingredients

5 medium sweet potatoes

1 stick unsalted butter

1 1/4 cup light brown sugar, packed

1/2 cup granulated sugar

1/4 teaspoon salt

1 1/2 teaspoon ground cinnamon

1 1/2 teaspoon ground nutmeg

1 tablespoon pure vanilla extract

1/2 cup evaporated milk

Directions

Preheat oven to 375°. Spray a 13x9-inch baking pan with cooking spray.

Clean sweet potatoes and put in a large stock pot filled with cold water; cover and bring to a boil. Cook potatoes until fork tender, about 25-30 minutes; drain potatoes and run cold water over them to cool and stop cooking. Set potatoes aside to cool.

Peel and slice sweet potatoes (about 2-inch thickness). Layer the yams in baking pan; Sprinkle 1/2 teaspoon of cinnamon and 1/2 teaspoon of nutmeg over potatoes.

Melt the butter in a sauce pan on medium temperature; add both sugars and stir to combine.

Add the remaining ingredients except the milk; let the sugar mixture come to a boil. Slowly pour in the milk and stir until sugar mixture thickens. The sauce will resemble caramel sauce when it thickens. (Use a small spoon to taste sugar mixture to make sure it's sweet enough).

Pour sauce over the sweet potatoes; shake pan to make sure all potatoes are coated. Bake 45 minutes until sauce has thickened.

Remove from oven to cool.
