
Supreme Meat Nachos
Ingredients
½ pound ground Italian sausage (spicy)
¼ cup onion, chopped
¼ cup red bell pepper, chopped
¼ cup green bell pepper, chopped
8 ounces red kidney beans, drained
1/3 cup thick & chunky salsa
6 cups tortilla chips
8 ounces Colby-Jack cheese, shredded
¼ cup black olives, sliced
4 green onion, chopped

Directions

Combine sausage, onion, and bell peppers in a skillet.

Cook over medium heat until sausage is browned and vegetables are tender; drain well.

Stir in beans and salsa; cook until heated through.

Arrange half the chips on a 12-inch round microwave safe platter.

Spoon half the sausage mixture evenly over chips; top with half the cheese.

Microwave, uncovered on high for 2 minutes or until cheese melts, giving the dish a half turn once.

Repeat with remaining ingredients.

Spread green onions over nachos.
