Batter-Fried Zucchini Rounds
Ingredients
6 small zucchini, sliced into 1-inch thickness
1 tablespoon seasoning salt
3 tablespoons honey
2 cups pancake mix
1 cup water
1 quart canola oil

Directions

Combine pancake mix and water; add seasoning salt and honey; stir to mix well.

Dip zucchini slices into the batter, a few pieces at a time.

In a large pot, heat oil to 350 degrees.

Add zucchini, a few pieces at a time, to hot oil; cook 5-7 minutes or until golden brown.

Drain on paper towel; cook remaining zucchini pieces
