Crab Fritters

Ingredients

  • 4 tablespoons unsalted butter

  • 1 tablespoon all purpose flour

  • 2 eggs, lightly beaten

  • 1 pound lump crab meat

  • 3 scallions, sliced thinly

  • 1 cup breadcrumbs (PANKO)

  • 1 tablespoon fresh parsley, chopped

  • 1 teaspoon Old Bay Seasoning

  • ½ teaspoon black pepper

  • 1 lemon, cut in wedges

Directions

  1. In a large bowl, gently mix all ingredients, except the lemon.

  2. Gently stir crab mixture; do not over-mix or the crab meat will break into small pieces. 

  3. In a large frying pan, heat butter until foamy. 

  4. Form the crab meat mixture into a medium size ball then flatten them to form disks. 

  5. Fry until golden brown, about 3-4 minutes on each side, adding more butter to the pan as needed. 

  6. Drain on paper towels.  Squeeze lemon wedges over fritters.
