Crab Fritters
Ingredients

4 tablespoons unsalted butter

1 tablespoon all purpose flour

2 eggs, lightly beaten

1 pound lump crab meat
-
3 scallions, sliced thinly

1 cup breadcrumbs (PANKO)

1 tablespoon fresh parsley, chopped
-
1 teaspoon Old Bay Seasoning

½ teaspoon black pepper
-
1 lemon, cut in wedges
Directions

In a large bowl, gently mix all ingredients, except the lemon.

Gently stir crab mixture; do not over-mix or the crab meat will break into small pieces.

In a large frying pan, heat butter until foamy.

Form the crab meat mixture into a medium size ball then flatten them to form disks.

Fry until golden brown, about 3-4 minutes on each side, adding more butter to the pan as needed.

Drain on paper towels. Squeeze lemon wedges over fritters.
