Panko Fried Zucchini
Ingredients

8 large zucchini, sliced lengthwise
-
2 large eggs, beaten
-
1 tablespoon water
-
1 cup all purpose flour
-
1 ½ cup PANKO bread crumbs
-
1 tablespoon Italian seasoning
-
¼ cup grated parmesan cheese
-
1 teaspoon salt
-
1 teaspoon black pepper
-
3 cups canola oil

Directions
-
Heat the oil in a deep fryer to 350 degrees.

Pour eggs & water in first bowl.
-
In second bowl, mix flour with salt & pepper.
-
In third bowl, add Italian seasoning & Parmesan to PANKO breadcrumbs.
-
Take 4 zucchini slices and dip in flour, coating well.

Remove slices from flour and dip into egg mixture; then coat them evenly with the PANKO.
-
Drop zucchini in hot oil one at a time.
-
Cook for 5-6 minutes until golden brown; drain on a paper towel.
-
Repeat the steps until all slices are cooked.
