Panko Fried Zucchini

Ingredients

  • 8 large zucchini, sliced lengthwise

  • 2 large eggs, beaten

  • 1 tablespoon water

  • 1 cup all purpose flour

  • 1 ½ cup PANKO bread crumbs

  • 1 tablespoon Italian seasoning

  • ¼ cup grated parmesan cheese

  • 1 teaspoon salt

  • 1 teaspoon black pepper

  • 3 cups canola oil

Directions

  1. Heat the oil in a deep fryer to 350 degrees.  

  2. Pour eggs & water in first bowl.

  3. In second bowl, mix flour with salt & pepper.

  4. In third bowl, add Italian seasoning & Parmesan to PANKO breadcrumbs. 

  5. Take 4 zucchini slices and dip in flour, coating well. 

  6. Remove slices from flour and dip into egg mixture; then coat them evenly with the PANKO. 

  7. Drop zucchini in hot oil one at a time. 

  8. Cook for 5-6 minutes until golden brown; drain on a paper towel. 

  9. Repeat the steps until all slices are cooked.
