Salmon Patties

Ingredients

  • 1 pound salmon fillet, cooked

  • 3 tablespoons butter, divided

  • 3 tablespoons butter, melted

  • ½  red onion, chopped

  • 2 stalks celery, chopped, optional

  • ¼ cup green bell pepper

  • ¼ cup yellow bell pepper

  • 3 teaspoons hot sauce

  • 2 tablespoons Worcestershire Sauce

  • 1 tablespoon Old Bay seasoning

  • 3 tablespoons mayonnaise

  • 1 large egg, beaten

  • 1 cup seasoned breadcrumbs

Directions

  1. Preheat oven to 375 degrees.  In a large bowl, crumble the salmon using a fork; set aside. 

  2. In a saucepan, 3 tablespoons of melt butter.  Add vegetables, hot sauce and Worcestershire sauce, cook on medium until vegetables are tender; pour in bowl to cool. 

  3. Combine vegetables with salmon; stir to mix well.   Add egg, mayo and ½ cup of breadcrumbs to the salmon mixture, stirring gently.  Form salmon mixture into 8 patties. 

  4. Pour the remaining breadcrumbs onto a plate, coat the patties on both sides; brush the top of patties with remaining melted butter.

  5. Bake on flat pan for 30 minutes until golden brown; turning the patties over at least once.
