
Terri's Original Sweet Potato Pie
Ingredients

8 large sweet potatoes

1 1/2 sticks unsalted butter, melted

1 1/4 cup granulated sugar

1 1/4 cup light brown sugar, packed

2 tablespoons All-Purpose flour

1 1/2 tablespoons ground nutmeg

1½ tablespoons ground cinnamon

1 1/2 tablespoon lemon extract
-
3 tablespoons vanilla extract

3 large eggs
-
2 cups whole milk

8 frozen pie shells

prepare batter the day before for a better tasting pie.

NOTE: this recipe usually makes 6-8 sweet potato pies

Directions

Preheat oven to 400°; place yams on a sheet pan and bake for 1 hour until tender. Remove from oven and let cool. Reduce oven temperature to 350 degrees.

Let pie shells thaw out and pierce holes in the bottom; wrap foil around the edges of pie shell.

Peel potatoes and mash in a large bowl; stir in melted butter.

Lightly mix together the eggs and milk in a small bowl; pour mixture into sweet potato batter then pour batter into the mixer and beat well until smooth. Add vanilla and lemon extracts; mix well.

Using another bowl, stir together both sugars, flour and spices; mix well then pour dry ingredients into the mixer with the sweet potato batter; beat until well blended and smooth.

Use a small spoon to taste batter to make sure the batter is sweet enough. If the batter isn’t sweet enough, add an additional ½ cup granulated sugar; mix well.

Pour batter into pie shells and smooth out.

Place pie shells on baking sheet and bake 60 minutes until pie shells brown.

Remove foil from pie-crust and bake additional 15 minutes. Let pie cool on wire rack.
