
Oven Roasted Turkey
Ingredients

18 pounds fresh turkey (Butterball)

2 medium sweet onions, peeled & quartered

6 stalks of celery cut in half

3 tablespoons poultry seasoning

1 tablespoon black pepper

12 tablespoons unsalted butter, sliced

1 cup chicken broth

Directions

Preheat oven to 300 degrees. Remove turkey from packaging and place in clean sink.

Sprinkle salt all over turkey to remove impurities. Rinse turkey well under running water; drain excess water. Place turkey on flat pan; pat dry with paper towels.

Tie the legs together with kitchen twine and fold the wings back and place turkey on a rack in a large roasting pan. Sprinkle spices all over the turkey, including the back and inside of turkey.

Place onions and celery inside turkey cavity. Add butter to the wings, legs, breasts, and underneath the breast skin. Pour broth in bottom of roaster.

Place the roaster lid on and cook 4-5 hours (depending on turkey size) until the thermometer inserted in the turkey breast has popped up.

Raise oven temperature to 375 degrees; remove the roaster lid and cook for an additional 30-40 minutes until turkey turns golden brown.

Remove roaster from oven and let rest for 15 minutes; transfer turkey to a platter to carve.
