Gourmet Crab Cakes

Ingredients

  • 2½ cups lump crabmeat

  • ¾ cup onion, chopped

  • 1 teaspoon dry mustard

  • ¼ teaspoon cayenne pepper

  • ¼ cup mayo

  • ¼ cup breadcrumbs

  • 1 egg, beaten w/3 tablespoons heavy cream

  • vegetable oil, for frying

  • 1 cup breadcrumbs

Directions

  1. In a bowl, combine all of the ingredients except the vegetable oil; shape into 8 cakes. 

  2. In a heavy skillet, heat 1 inch of oil over moderate high heat.  Lightly coat cakes in dried breadcrumbs

  3. And fry in the hot oil until golden brown. 

  4. Serve with tartar sauce.
