Gourmet Crab Cakes
Ingredients

2½ cups lump crabmeat
-
¾ cup onion, chopped

1 teaspoon dry mustard

¼ teaspoon cayenne pepper

¼ cup mayo
-
¼ cup breadcrumbs
-
1 egg, beaten w/3 tablespoons heavy cream
-
vegetable oil, for frying
-
1 cup breadcrumbs
Directions
-
In a bowl, combine all of the ingredients except the vegetable oil; shape into 8 cakes.

In a heavy skillet, heat 1 inch of oil over moderate high heat. Lightly coat cakes in dried breadcrumbs

And fry in the hot oil until golden brown.

Serve with tartar sauce.
