Evelyn's Chicken & Noodle Recipe

Ingredients

  • 1 whole chicken, cut up

  • 1 large onion, choppe

  • 1 tablespoon kosher salt

  • 1 teaspoon black pepper

  • 1 bay leaf, optional

  • 3 celery ribs, chopped

  • 3 large carrots, chopped

  • 1 tablespoon poultry seasoning

  • 1 teaspoon ground sage

  • 3 tablespoons butter

  • 16 ounces egg noodles

  • 2 teaspoons corn starch

  • ½ cup water

Directions

  1. Boil chicken in large stockpot; remove chicken residue from pot for a clear broth.

  2. Add remaining ingredients except noodles. Cook 30 minutes or until chicken is done.

  3. Remove cooked chicken from pot; let cool.

  4. Remove bones and skin from chicken; cut up chicken and set aside.

  5. Add egg noodles to broth; bring to boil and cook 8-10 minutes until noodles are tender.

  6. Combine cornstarch with water, stir until smooth; pour in broth.  Stir to mix well, reduce temperature to low.

  7. Return chicken to pot; continue cooking for 15 minutes.
