Southern Peach Cobbler

Ingredients

  • ¼ cup unsalted butter

  • 1 tablespoon plus 2/3 cups baking mix

  • 4 cups sliced & peeled fresh peaches

  • ½ teaspoon ground cinnamon

  • ½ cup granulated sugar

  • 4 tablespoons light brown sugar

  • 2 tablespoons whole milk

Directions

  1. Preheat oven to 400°.  In 1-quart shallow casserole, combine peaches, sugar, 1 tablespoon baking mix and cinnamon. 

  2. In medium bowl, mix remaining baking mix with brown sugar.

  3. Cut in butter until mixture is pea sized. 

  4. Stir in milk until moistened; drop by spoonfuls onto peaches.

  5. Bake 30 minutes; Let stand 5 minutes. 

  6. Serve with vanilla ice cream.
