
Smothered Pork Chops
Ingredients

10 pork chops
-
2 medium sweet onions, sliced

2 cups canola oil

3 tablespoons creole seasoning*

3 cups plus 3 tablespoons all purpose flour

2 cups water

*I like to use Tony Chachere's Creole Seasoning

Directions

Preheat oven to 350°.

Heat oil in large skillet.

Season pork chops on both sides; dredge in flour.

Cook chops in oil 4-6 minutes per side until golden brown.

Remove chops from skillet and put in baking dish.

Layer onions on top of chops. Drain all but 3 tablespoons of oil drippings from skillet.

Add flour to pan; turn temperature up to high and stir until it thickens and turns brown.

Slowly add water to mixture stirring constantly to make gravy; bring to a boil. Season with salt and pepper. Reduce temperature to simmer.

Cook 5 minutes; pour gravy over pork chops in baking dish. Cover with aluminum foil and cook in oven for 30 minutes.
