Smothered Pork Chops

Ingredients

  • 10 pork chops

  • 2 medium sweet onions, sliced

  • 2 cups canola oil

  • 3 tablespoons creole seasoning*

  • 3 cups plus 3 tablespoons all purpose flour

  • 2 cups water

*I like to use Tony Chachere's Creole Seasoning

Directions

  1. Preheat oven to 350°. 

  2. Heat oil in large skillet. 

  3. Season pork chops on both sides; dredge in flour. 

  4. Cook chops in oil 4-6 minutes per side until golden brown. 

  5. Remove chops from skillet and put in baking dish. 

  6. Layer onions on top of chops.  Drain all but 3 tablespoons of oil drippings from skillet. 

  7. Add flour to pan; turn temperature up to high and stir until it thickens and turns brown. 

  8. Slowly add water to mixture stirring constantly to make gravy; bring to a boil.  Season with salt and pepper.  Reduce temperature to simmer.  

  9. Cook 5 minutes; pour gravy over pork chops in baking dish.  Cover with aluminum foil and cook in oven for 30 minutes.
