Baked Catfish w/Butter Sauce

Ingredients

Catfish:

  • 6 catfish fillets (skinless)

  • 1 teaspoon kosher salt

  • 1 teaspoon lemon pepper

  • ¼ teaspoon cayenne pepper

  • 2 tablespoons corn oil

  • 12 tablespoons margarine, divided

  • 1 cup bread crumbs

  • 3 tablespoons fresh lemon juice

 

Butter Sauce:

  • 2 tablespoons Worcestershire sauce

  • 2 teaspoons Tabasco sauce

  • 2 tablespoons fresh parsley, minced

  • ¼ teaspoon cayenne pepper

  • ¼ cup green onions, chopped

  • 1 teaspoon sweet basil

  • 6 lemon slices

Directions

Catfish:

  1. Preheat oven to 400°.  Combine the spices together in a small bowl; season fillets with spice mixture.

  2. Spray a 9x13 glass-baking dish with PAM spray; place fillets in dish and top with 4 tablespoons butter. 

  3. Sprinkle with breadcrumbs and 1 tablespoon of lemon juice.  Bake uncovered for 15-18 minutes or until golden brown and fish flakes easily when touched with a fork.  Do not overcook. 

 

Butter Sauce:

  1. Combine remaining butter and lemon juice with ingredients; simmer for 5 minutes. 

  2. Place fillets on serving platter; top with butter sauce and garnish with lemon slices.
