
Baked Catfish w/Butter Sauce
Ingredients
Catfish:

6 catfish fillets (skinless)

1 teaspoon kosher salt
-
1 teaspoon lemon pepper
-
¼ teaspoon cayenne pepper
-
2 tablespoons corn oil
-
12 tablespoons margarine, divided
-
1 cup bread crumbs
-
3 tablespoons fresh lemon juice
Butter Sauce:
-
2 tablespoons Worcestershire sauce
-
2 teaspoons Tabasco sauce
-
2 tablespoons fresh parsley, minced
-
¼ teaspoon cayenne pepper
-
¼ cup green onions, chopped
-
1 teaspoon sweet basil
-
6 lemon slices
Directions
Catfish:

Preheat oven to 400°. Combine the spices together in a small bowl; season fillets with spice mixture.

Spray a 9x13 glass-baking dish with PAM spray; place fillets in dish and top with 4 tablespoons butter.

Sprinkle with breadcrumbs and 1 tablespoon of lemon juice. Bake uncovered for 15-18 minutes or until golden brown and fish flakes easily when touched with a fork. Do not overcook.
Butter Sauce:
-
Combine remaining butter and lemon juice with ingredients; simmer for 5 minutes.

Place fillets on serving platter; top with butter sauce and garnish with lemon slices.
