Spiced Beef Tenderloin

Ingredients

  • 2 pounds beef tenderloin, trimmed and defatted, but left whole

  • 4 tablespoons extra virgin olive oil

  • 1 tablespoon dry thyme

  • 1 tablespoon fresh rosemary, finely chopped

  • 2 teaspoons garlic, diced

  • 1 tablespoon freshly cracked black pepper

  • 1 tablespoon kosher salt

  • 4 tablespoons unsalted butter, melted

Directions

  1. Preheat oven to 475º.

  2. Rub tenderloin all over with oil; season generously with spices and herbs.

  3. Heat a large skillet over medium-high heat. Sear tenderloin on all sides until browned, 2 minutes per side.

  4. Transfer to a baking dish and pour butter over top of beef.

  5. Roast until a meat thermometer reaches 140º for medium-well, about 25-30 minutes.

  6. Remove beef from oven and place on platter.

  7. Cover loosely with foil and let beef rest 10 minutes, then slice and serve.
