
Spiced Beef Tenderloin
Ingredients

2 pounds beef tenderloin, trimmed and defatted, but left whole

4 tablespoons extra virgin olive oil

1 tablespoon dry thyme

1 tablespoon fresh rosemary, finely chopped

2 teaspoons garlic, diced

1 tablespoon freshly cracked black pepper

1 tablespoon kosher salt

4 tablespoons unsalted butter, melted

Directions

Preheat oven to 475º.

Rub tenderloin all over with oil; season generously with spices and herbs.

Heat a large skillet over medium-high heat. Sear tenderloin on all sides until browned, 2 minutes per side.

Transfer to a baking dish and pour butter over top of beef.

Roast until a meat thermometer reaches 140º for medium-well, about 25-30 minutes.

Remove beef from oven and place on platter.

Cover loosely with foil and let beef rest 10 minutes, then slice and serve.
