
Shrimp Scampi w/Spaghetti
Ingredients

4 tablespoons extra virgin olive oil

8 tablespoons unsalted butter (divided)

7-8 large garlic cloves, minced or 1 1/2 tablespoons minced garlic

2 teaspoons kosher salt

1 teaspoon ground black pepper

½ cup chicken broth
-
1 teaspoon crushed red pepper flakes

6 tablespoons lemon juice
-
3 teaspoons dried parsley flakes

3 pounds medium shrimp, peeled & cleaned

16 ounces linguine or spaghetti, cooked

Directions

Cook pasta, drain and set aside.

Heat olive oil and 2 tablespoons butter in a large skillet. Add garlic and sauté until fragrant (about 30 seconds - 1 minute).

Add the shrimp, season with salt and pepper; sauté for 1-2 minutes on one side (until just beginning to turn pink), flip and cook the other side, 1 minute.

Pour in wine (or broth), add red pepper flakes (if using). Bring to a simmer for 1-2 minutes or until wine reduces by about half and the shrimp is cooked through (don't over cook your shrimp).

Stir in the remaining butter, lemon juice and parsley and take off heat immediately.

Pour pasta into skillet and stir until mixed well.
