Apple Pancakes

Ingredients

  • 2 large eggs                           

  • ½ cup all-purpose flour

  • ¼ teaspoon salt                              

  • 1cup whole milk, divided in half 

  • 1 tablespoon of unsalted butter                      

  • ¾ cup packed light brown sugar

  • 1½ tablespoons cornstarch         

  • ¼ cup butter, melted                         

  • 4 cups granny smith apples, peeled, cored & sliced 

Directions

  1. Heat a 10-inch ovenproof nonstick skillet at 450º for 5 minutes.

  2. Combine first 3 ingredients and 1/2 cup milk in a bowl; beat at medium speed with mixer until smooth. 

  3. Add 1 tablespoon butter to hot skillet, stirring to coat skillet; pour batter in skillet; bake for 10 minutes; reduce heat to 350º and bake 10 more minutes. 

  4. Combine the brown sugar and cornstarch in a saucepan; stir in 1/2 cup milk and melted butter. 

  5. Cook over medium heat for 5 minutes; add apples and cook 10 minutes longer, stirring often. 

  6. Spoon half of mixture onto pancake.  Cut into wedges and serve with remaining apple mixture.
