Roasted Potatoes

Ingredients

  • 10 red potatoes, halved

  • ¼ cup extra virgin olive oil

  • 2 garlic cloves, minced

  • 1 teaspoon kosher salt

  • 1 teaspoon ground black pepper

  • 3 sprigs of fresh rosemary, chopped

  • 1 tablespoon fresh parsley, chopped

Directions

  1. Preheat oven to 400°. 

  2. Place potatoes on flat pan lined with foil; drizzle with olive oil.

  3. Add garlic, salt and black pepper; mix well.

  4. Sprinkle rosemary over potatoes. 

  5. Bake 40 minutes or until potatoes are crisp and golden brown. 

  6. Remove from oven, sprinkle with parsley.
