Directions

  1. Preheat oven to 400°.  Let pie shells thaw; turn the regular pie shell upside and place on paper towel.

  2. In a large bowl, combine all of the dry ingredients; whisk to mix well. (dry ingredients: sugars, flour, spices & salt). Pour the sliced peaches in a separate bowl.

  3. Pour the dry ingredients into the bowl with the peaches and gently stir; add vanilla extract.

  4. Pour peach mixture into the deep-dish pie shell, spread evenly.

  5. Place the second pie shell on top of peach mixture; crimp the edges to seal the pie.

  6. Combine the water & beaten egg in a small bowl.  Use a pastry brush to brush egg mixture over top of pie.

  7. Cover edges of pie with foil to prevent the edges from burning.  Cut 4 slits on the top crust to vent the pie while cooking.

  8. Line a baking sheet with foil (for easy cleanup). Place pie on baking sheet and cook 45-50 minutes.

  9. Gently remove foil from pie edges.  Bake an additional 10 minutes.  Remove from oven and let cool.
