Terri's Simple Pound Cake
 

Ingredients

  • ​1 1/2 cups All-Purpose flour

  • 1 teaspoon salt

  • 1/2 teaspoon baking powder

  • 1 cup unsalted butter, room temperature

  • 1 cup granulated sugar

  • 4 large eggs

  • 1/2 cup sour cream

  • 2 tablespoons vanilla extract

Lemon Glaze: optional

1/2 cup powdered sugar

1teaspoon fresh lemon juice

Directions

  1. Preheat oven to 350 degrees. Butter and flour a 9x5-inch loaf pan.

  2. In a medium bowl, whisk together flour, salt and baking powder; set aside.

  3. Cream butter in mixer using the whisk attachment; add sugar and whisk until light and fluffy.  Scrape down sides of bowl and beat a few more seconds.

  4. Reduce mixer speed; add eggs one at a time.  Scrape down sides of bowl and beat until fully incorporated.  Add vanilla and sour cream; mix until fully incorporated.  Scrape down bowl and mix again.

  5. Add flour mixture and mix until well combined; scrape down bowl using rubber spatula.  Stir to make sure there are no more air pockets of flour or butter left in batter.

  6. Pour batter into pan, smooth out batter on top.  Bake 40 minutes until done and center is set.  Remove from oven and allow to cool for 10 minutes before setting on wire rack.

Lemon Glaze:

  1. Combine powdered sugar and lemon juice in small bowl; stir to mix well.  Drizzle over cake.
