Honey Glazed Carrots

Ingredients

  • 16 ounces baby carrots

  • ¾ cup water

  • 2 tablespoon unsalted butter, divided

  • ½  cup honey

  • 2 tablespoons orange juice

  • 1/8 teaspoon salt

  • 1/8 teaspoon ground nutmeg

  • ½ teaspoon parsley flakes

Directions

  1. In a large skillet combine carrots, water, and 1 tablespoon of the butter.

  2. Bring to boil; reduce heat to medium. 

  3. Cover and cook for 10 minutes or until carrots are nearly tender. 

  4. Drain liquid from carrots; return to skillet. 

  5. In a small bowl combine honey, orange juice, salt, and nutmeg; pour over carrots. 

  6. Add the remaining butter and cook uncovered, until carrots are tender, stirring frequently.

  7.  Sprinkle with parsley.
