Chicken Soft Tacos

Ingredients

  • 8 flour tortillas

  • ¼ cup vegetable oil

  • 2 cups tomato, chopped

  • 1 cup onion, chopped

  • 1 green bell pepper, chopped

  • 4 cups cooked chicken, shredded

  • ½ teaspoon thyme

  • ½ teaspoon cumin

  • 1 teaspoon chili powder

  • ¾ cups chicken broth

  • 2 tablespoons fresh cilantro, chopped

  • 1 teaspoon salt

  • ½ teaspoon black pepper

Directions

  1. ​Wrap tortillas with foil and place in oven on a low temperature to keep warm until ready to use.

  2. Heat oil in skillet;  add tomatoes, onions, and peppers; heat for 3 minutes.

  3. Stir in chicken, thyme, cumin, chili powder and chicken broth. Season with salt and pepper.​

  4. Fill warm tortillas with chicken mixture and serve.
