Gourmet Fried Bologna Sandwich

Ingredients

  • 2 tablespoons butter

  • 4 slices bologna (1½-inch thick)

  • 4 slices cheddar cheese

  • 4 slices mozzarella cheese

  • 1 small sweet onion, sliced

  • 2 tablespoons mayonnaise 

  • 2 teaspoons mustard 

  • 8 lettuce leaves

  • 1 large beef tomato, sliced 

  • 4 Kaiser rolls

  • 8 dill pickle spears

Directions

  1. In a cast-iron skillet set over medium-high heat, melt the butter; add bologna.

  2. Fry until bologna turns golden brown, about 2 minutes; flip over and fry the other side.

  3. Top each slice of bologna with 1 slice of cheddar and 1 slice of mozzarella cheese; let melt.

  4. Spread mayo on the bottom half of roll; spread mustard on top half.

  5. Place a bologna slice on the bottom half of bread; layer it with lettuce, tomato and onion.

  6. Cover the sandwich with the top half of roll.

  7. Repeat with remaining slices; slice each sandwich in half and serve with dill pickle spears.
