
Gourmet Fried Bologna Sandwich
Ingredients

2 tablespoons butter

4 slices bologna (1½-inch thick)

4 slices cheddar cheese

4 slices mozzarella cheese

1 small sweet onion, sliced

2 tablespoons mayonnaise

2 teaspoons mustard
-
8 lettuce leaves
-
1 large beef tomato, sliced
-
4 Kaiser rolls
-
8 dill pickle spears

Directions

In a cast-iron skillet set over medium-high heat, melt the butter; add bologna.

Fry until bologna turns golden brown, about 2 minutes; flip over and fry the other side.

Top each slice of bologna with 1 slice of cheddar and 1 slice of mozzarella cheese; let melt.

Spread mayo on the bottom half of roll; spread mustard on top half.

Place a bologna slice on the bottom half of bread; layer it with lettuce, tomato and onion.

Cover the sandwich with the top half of roll.

Repeat with remaining slices; slice each sandwich in half and serve with dill pickle spears.
