Light Buttermilk Pancakes

Ingredients

  • 1 ½ cups All Purpose flour

  • 2 teaspoons baking powder

  • ½ teaspoon baking soda

  • 1 tablespoon granulated sugar

  • ¼ teaspoon salt

  • 1 ½ cups buttermilk

  • 1 teaspoon vanilla extract 

  • 1 large egg

  • 3 tablespoons unsalted butter, melted

Optional Toppings:

Fresh blueberries and/or strawberries

Directions

  1. In a large bowl, whisk together flour, baking powder, baking soda, sugar and salt.

  2. In a separate bowl, whisk together buttermilk, vanilla, egg and melted butter; stir wet ingredients into dry ingredients just until combined. (There will be lumps in the batter.)

  3. Heat nonstick griddle over medium-low heat; grease with oil.

  4. Drop dollops of batter onto the hot pan.  Once bubbles form, flip the pancakes once; continue cooking 1-2 more minutes until cooked throughout.

  5. Serve immediately with butter and maple syrup.
