Bourbon Barbecue Chicken Wings

Ingredients

Preparing Chicken Wings:

  • 4 pounds chicken wings, flats & drumettes

  • 3 teaspoon coarse sea salt

  • Freshly ground black pepper

  • 1 tablespoon baking powder

Bourbon BBQ Sauce (makes 2 cups):

  • 1/2 cup bourbon

  • 1 cup ketchup

  • 4 tablespoons apple cider vinegar

  • 1/2 cup honey

  • 2/3 cups light brown sugar, packed

  • 1 teaspoon onion powder

  • 1 teaspoon garlic powder

  • 4 teaspoons hot sauce

  • 4 tablespoons Worcestershire sauce

  • Salt to taste, if needed

Directions

Bourbon BBQ Sauce:

  1. Whisk together the sauce ingredients in a pan over medium heat and bring to a simmer. Stir occasionally and simmer for 10-15 minutes.

 

Cooking Chicken Wings:

  1. Preheat the oven to 425°F.  Line a large rimmed baking sheet with foil and place oven-safe wire cooling racks on top of the foil. 

  2. Pat the chicken wings dry, then evenly coat with salt and pepper. Evenly sprinkle the baking powder across the chicken wings, tossing to coat, ensuring they are covered and no baking powder clumps remain. 

  3. Place the wings on the pan, skin side up, and place in the oven.  Bake for 35 minutes, flipping halfway through cooking time if desired.

  4. After 35 minutes, check the internal temperature of the wings. They need to be at an internal temperature of at least 165°F. If they are, and the skin is crispy enough to your liking, remove them from the oven.

  5. If the skin needs to get a little more crispy, flip them back to the skin side and bake for an additional 10 minutes (the cooking time is going to depend on how big or small your wings are).

  6. Once the wings are ready, transfer them to a bowl and pour in the bbq sauce, tossing to coat evenly. You can reserve a bit of sauce for dipping.

Optional;

  1. Place the wings back on the baking sheet and place in the oven for an additional 5-7 minutes, giving the sauce a chance to caramelize and thicken.

  2. Remove chicken wings from the pan and place on a serving tray or plate, then dig in and enjoy!
