Vanilla Bean Cookies

Ingredients

1 cup unsalted butter, softened    

¾ cups golden sugar

¼ cup light brown sugar, packed

1 large egg

2 teaspoons vanilla extract 

2¼ cups All-Purpose flour

1½ teaspoon baking powder            

½ teaspoon salt

1 cup pecans, chopped

Directions

  1. Preheat oven to 350°. 

  2. Beat butter at medium speed with mixer until creamy, gradually add sugars, beating well. 

  3. Add egg and vanilla; beat mixture until well mixed. 

  4. Combine flour, baking powder and salt; add to butter mixture beating well at medium speed (dough will be stiff).  Stir in pecans. 

  5. Cover and chill dough at least 2 hours.  Shape dough into 2 rolls.   Wrap rolls in wax paper and chill or freeze until firm. 

  6. Slice chilled dough into ¼-inch thick slices; place on an un-greased cookie sheet.  Bake for 10-12 minutes or until lightly browned. 

  7. Remove cookies to wire racks to cool completely.  *These cookies can freeze up to 6 months.
