Madeleines
Ingredients

2 large eggs
-
1/8 teaspoon salt

1/3 cup golden sugar
-
½ cup All-Purpose flour
-
1 teaspoon lemon zest
-
½ cup unsalted butter, melted
-
powdered sugar, for sprinkling

Directions

Preheat oven to 400°. Grease and flour madeleine mold pan.

Beat eggs and salt at high speed in mixer until foamy.

Gradually add sugar; beat at high speed 15 minutes or until thick and pale.

Combine flour and lemon zest; fold in 2 tablespoons at a time. Fold in butter, 1 tablespoon at a time.

Spoon 1 tablespoon of batter into pan; bake 8-10 minutes or until lightly browned.

Cool madeleines in molds 3 minutes; remove and cool on a wire rack, flat side down. Sprinkle with powdered sugar.
