Madeleines

Ingredients

  • 2 large eggs

  • 1/8 teaspoon salt

  • 1/3 cup golden sugar

  • ½ cup All-Purpose flour

  • 1 teaspoon lemon zest

  • ½ cup unsalted butter, melted

  • powdered sugar, for sprinkling

Directions

  1. Preheat oven to 400°. Grease and flour madeleine mold pan.

  2. Beat eggs and salt at high speed in mixer until foamy.

  3. Gradually add sugar; beat at high speed 15 minutes or until thick and pale. 

  4. Combine flour and lemon zest; fold in 2 tablespoons at a time.  Fold in butter, 1 tablespoon at a time. 

  5. Spoon 1 tablespoon of batter into pan; bake 8-10 minutes or until lightly browned. 

  6. Cool madeleines in molds 3 minutes;  remove and cool on a wire rack, flat side down.  Sprinkle with powdered sugar.
