Golden Batter-Fried Chicken

Ingredients

  • 3 pounds chicken wings (1st & 2nd sections)

OR two whole chickens, cut into 8 pieces each

  • 2 tablespoon butter

  • 2 quarts canola oil

  • 4 cups pancake mix

  • 2 tablespoons seasoning salt

  • 1 teaspoon poultry seasoning

  • 1 teaspoon ground black pepper

  • 3 cups water

  • 4 tablespoons honey

Directions

  1. Fill a large pot with water; add chicken and butter. Boil 40-45 minutes until done.

  2. Remove chicken and set in bowl to cool completely. 

  3. Pour pancake mix, seasonings and water in a large bowl; stir until batter thickens.  Add honey and stir.

  4. Heat oil in deep fryer to 350 degrees; dip chicken into the batter making sure to coat all sides. 

  5. Let chicken stay in batter 3-5 minutes; remove pieces, one at a time and place in hot oil.

  6. Cook a few pieces at a time 8-10 minutes until golden brown.  Drain on wire rack.
