
Golden Batter-Fried Chicken
Ingredients

3 pounds chicken wings (1st & 2nd sections)
OR two whole chickens, cut into 8 pieces each

2 tablespoon butter

2 quarts canola oil
-
4 cups pancake mix
-
2 tablespoons seasoning salt

1 teaspoon poultry seasoning

1 teaspoon ground black pepper
-
3 cups water
-
4 tablespoons honey

Directions
-
Fill a large pot with water; add chicken and butter. Boil 40-45 minutes until done.

Remove chicken and set in bowl to cool completely.

Pour pancake mix, seasonings and water in a large bowl; stir until batter thickens. Add honey and stir.

Heat oil in deep fryer to 350 degrees; dip chicken into the batter making sure to coat all sides.

Let chicken stay in batter 3-5 minutes; remove pieces, one at a time and place in hot oil.

Cook a few pieces at a time 8-10 minutes until golden brown. Drain on wire rack.
