Slow Cooked Black-Eye 
Peas w/Meat

Ingredients

  • 1 pound fresh black-eyed peas

  • 1 medium onion, chopped 

  • 2 cloves garlic, minced         

  • 2 teaspoon seasoning salt

  • 1 teaspoons black pepper     

  • 1 tablespoon red pepper flakes

  • 3 quarts chicken broth (low sodium)

  • Ham Bone**

1 Large Ham Hock

Directions

  1. Pour fresh peas in a large bowl, fill bowl with water and let peas sit in water for 10 minutes.

  2. Sort through peas to remove all opened or broken peas.  Pour peas through a colander to drain water; repeat process.  

  3. In a separate bowl, fill with water and pour cleaned peas into bowl; cover and let soak overnight.  

  4. Drain the peas in a colander and pour in a 4-quart slow cooker.  Place meat in slow cooker, add chicken broth and all other ingredients.

  5. Cover and let cook on low for 8 hours OR 4 ½ hours on high, stirring frequently to prevent peas sticking.  Peas are done when they are tender and liquid thickens.

Serving Suggestions:

  1. Serve in bowl with chopped red onions on top and a little ham.

  2. Serve with rice, green onions and pieces of ham.

  3. Serve as a soup by adding a little more chicken broth to the crock-pot for more liquid. 

  4. Serve with biscuits or cornbread.
