Directions
-
Pour fresh peas in a large bowl, fill bowl with water and let peas sit in water for 10 minutes.
-
Sort through peas to remove all opened or broken peas. Pour peas through a colander to drain water; repeat process.
-
In a separate bowl, fill with water and pour cleaned peas into bowl; cover and let soak overnight.
-
Drain the peas in a colander and pour in a 4-quart slow cooker. Place meat in slow cooker, add chicken broth and all other ingredients.
-
Cover and let cook on low for 8 hours OR 4 ½ hours on high, stirring frequently to prevent peas sticking. Peas are done when they are tender and liquid thickens.
Serving Suggestions:
-
Serve in bowl with chopped red onions on top and a little ham.
-
Serve with rice, green onions and pieces of ham.
-
Serve as a soup by adding a little more chicken broth to the crock-pot for more liquid.
-
Serve with biscuits or cornbread.
