Black-eye Peas w/Rice
Ingredients

2 cups cooked black-eyed peas**

1 medium onion, chopped

½ pound bacon, chopped
-
1 teaspoon salt
-
2 cups cooked rice
-
1 teaspoon ground black pepper
-
1 jalapeno pepper, sliced

Directions

In a 4-quart saucepan, bring peas to a simmer over low heat and cook covered for 30 minutes.

Cook bacon in a large skillet until crisp. Remove bacon with slotted spoon and set aside and drain.

Add onions to bacon grease and cook until soft. When peas are warm, pour in onion mixture, rice and seasonings. Stir until well combined.

Chop bacon and add to rice mixture; adjust seasonings if needed. Serve immediately.
