Southern Buttermilk Biscuits
Ingredients
2 cup All-Purpose flour
1 teaspoon granulated sugar
½ teaspoon salt
3 tablespoon shortening (Crisco)
½ teaspoon baking soda
3 tablespoon unsalted butter, softened
2 teaspoon baking powder
¾ cup whole buttermilk

Directions
-
Preheat oven to 425°.
-
Sift flour, salt, baking soda, baking powder, and sugar into large bowl. Add shortening and butter.
-
Using a pastry cutter or two butter knives, cut shortening and butter into flour mixture until it starts to resemble coarse cornmeal. Add milk and stir the batter lightly with a fork.
-
Turn the dough onto a floured board or pastry cloth. Sprinkle a little more flour on the dough if it gets too sticky. Knead lightly 4-5 times.
-
Roll out or pat dough into an 8-inch circle, about ½-inch thick. Using a 2-inch biscuit or cookie cutter or a glass rim dipped in flour, cut dough into rounds. Gently re-roll scraps and cut again into rounds.
-
Place the biscuits on a lightly greased baking sheet, allowing a little space between each one. Place on lower shelf of hot oven and bake for 12-15 minutes or until golden brown.
-
Remove from oven and serve hot. Serves 10-12 biscuits.
