Cinnamon Rolls

Ingredients

Oatmeal Dough:

  • 2¼-2¾ cups AP flour    

  • 1/3 cup quick oats

  • ¼ cup granulated sugar                

  • 1 package rapid rise yeast

  • ½ teaspoon salt                

  • ¼ cup unsalted butter, cut up

  • ¼ cup whole milk                    

  • ¼ cup water

  • 1 egg

Filling:

  • 2 tablespoons unsalted butter, melted        

  • ½ cup light brown sugar, packed

  • 1½ teaspoon ground cinnamon     

  • ½ cup raisins

Honey Butter Icing

  • 1/3 cup powdered sugar, sifted        

  • 2 tablespoons unsalted butter, softened

  • 2 tablespoons honey

Directions

1.  In a large bowl, combine ¾ cup flour, oats, sugar, un-dissolved yeast and salt. 

2.  Heat ¼ cup butter, milk, and water until very warm; gradually add milk mixture to the dry ingredients; beat 2 minutes at medium speed, scraping the bowl occasionally. 

3.  Add the egg and ½ cup flour; beat 2 minutes at high speed.  Using a spoon, stir in enough of the remaining flour to make soft dough. 

4.  Knead on a lightly floured surface until smooth, about 5 minutes.  Place in greased bowl, turning to grease top. Cover the bowl and let the dough rise in a warm, draft-free place for about 45-60 minutes or until the dough doubles in size.  After an hour, flatten the dough.

5.  Cover and let rise in warm place 45-60 minutes or until doubled.  Bake the cinnamon buns for 25-30 minutes or until done.  Remove from oven and cool for 10 minutes on wire rack. 

6.  In small bowl, mix together the powdered sugar and softened butter with a fork until blended; add the honey and stir until smooth.  Drizzle over the rolls.

 

Bread Machine Variation:

1.  Measure dough ingredients into bread machine pan as directed; use 2 1/3 cups of all-purpose flour and 1½ teaspoons bread machine yeast.

2.  Turn the machine on “process dough/manual” cycle.  Once the cycle is completed, remove dough to floured surface; knead in additional flour to make dough easy to handle. 

3.  Roll out dough and proceed as directed for making the cinnamon buns.
