Chocolate Morsel Cupcakes w/Frosting

Ingredients

Cupcakes:

  • 2½ C all purpose flour                   

  • 2 ¼ tsp. baking powder

  • ½ tsp. salt                                    

  • 1 C butter

  • 1½ C sugar                                  

  • 2 tsp. vanilla extract

  • 4 eggs                                          

  • 1 C milk

  • 12oz semi-sweet mini morsels

Chocolate Frosting:

  • 1 C semi-sweet morsels                  

  • 2½ C sifted powder sugar

  • ½ C butter                                    

  • ¼ C milk

  • 1 tsp. vanilla extract

Directions

Cupcake Batter:

  1. Preheat oven to 375°.  

  2. In large bowl, combine flour, baking powder and salt; set aside.  

  3. In mixer bowl, beat butter, sugar and vanilla extract until creamy.  Add eggs, one at a time, beating well after each addition.  

  4. Blend in flour mixture alternately with milk.  Stir in ¾ cup mini morsels.  

  5. Spoon batter into 24 paper lined muffin cups.  

  6. Bake 18-22 minutes or until tops spring back when lightly pressed.  Cool.  Spread with chocolate frosting.  

  7. Sprinkle with remaining ¼ cup mini morsels.

Chocolate Frosting:

  1. Melt remaining 1 cup mini morsels in a bowl in the microwave; cool.  

  2. In mixer bowl, beat butter, powdered sugar, milk, vanilla and melted chocolate until creamy.

  3. Frost each cupcake.
