
Chocolate Morsel Cupcakes w/Frosting
Ingredients
Cupcakes:

2½ C all purpose flour

2 ¼ tsp. baking powder

½ tsp. salt

1 C butter
-
1½ C sugar
-
2 tsp. vanilla extract
-
4 eggs
-
1 C milk
-
12oz semi-sweet mini morsels
Chocolate Frosting:
-
1 C semi-sweet morsels
-
2½ C sifted powder sugar
-
½ C butter
-
¼ C milk
-
1 tsp. vanilla extract

Directions
Cupcake Batter:
-
Preheat oven to 375°.

In large bowl, combine flour, baking powder and salt; set aside.

In mixer bowl, beat butter, sugar and vanilla extract until creamy. Add eggs, one at a time, beating well after each addition.

Blend in flour mixture alternately with milk. Stir in ¾ cup mini morsels.

Spoon batter into 24 paper lined muffin cups.

Bake 18-22 minutes or until tops spring back when lightly pressed. Cool. Spread with chocolate frosting.

Sprinkle with remaining ¼ cup mini morsels.

Chocolate Frosting:
-
Melt remaining 1 cup mini morsels in a bowl in the microwave; cool.
-
In mixer bowl, beat butter, powdered sugar, milk, vanilla and melted chocolate until creamy.

Frost each cupcake.
