 Coconut Brownie Bars 

Ingredients

  • 1 cup All-Purpose flour    

  • 1½ cups light brown sugar, divided    

  • ½ cup unsalted butter, softened    

  • 2 large eggs, room temperature

  • 2 tablespoons All-Purpose flour    

  • ½ teaspoon baking powder

  • ¼ teaspoon kosher salt        

  • 1 cup pecans, chopped

  • ½ cup flaked coconut    

  • 1 1/2 teaspoon vanilla extract

Directions

  1. Preheat oven to 350 degrees.

  2. Combine the 1 cup of flour and ½ cup brown sugar; cut in butter w/pastry cutter or a fork until mixture is crumbly. 

  3. Press into bottom of a 9” square pan, bake for 15 minutes. 

  4. Beat eggs at medium speed with an electric mixer about 2 minutes or until thick and pale in color. 

  5. Stir in remaining 1 cup sugar, 2 tablespoons of flour, baking powder and salt; add pecans, coconut and vanilla, mixing well. 

  6. Spoon batter into pan and bake 30 minutes.  Cut into bars.
