
Coconut Brownie Bars
Ingredients

1 cup All-Purpose flour

1½ cups light brown sugar, divided

½ cup unsalted butter, softened

2 large eggs, room temperature

2 tablespoons All-Purpose flour

½ teaspoon baking powder
-
¼ teaspoon kosher salt

1 cup pecans, chopped
-
½ cup flaked coconut
-
1 1/2 teaspoon vanilla extract

Directions

Preheat oven to 350 degrees.

Combine the 1 cup of flour and ½ cup brown sugar; cut in butter w/pastry cutter or a fork until mixture is crumbly.

Press into bottom of a 9” square pan, bake for 15 minutes.

Beat eggs at medium speed with an electric mixer about 2 minutes or until thick and pale in color.

Stir in remaining 1 cup sugar, 2 tablespoons of flour, baking powder and salt; add pecans, coconut and vanilla, mixing well.

Spoon batter into pan and bake 30 minutes. Cut into bars.
