Hickory Smoked Grilled Salmon

Ingredients

  • 2 pounds salmon fillets, cut into 4” pieces

  • 2 tablespoons Chesapeake Bay Seasoning

  • ¼ cup lemon juice

  • 3 tablespoons butter, melted

Directions

  1. Cut the salmon fillets into 4” pieces; season with the Chesapeake Bay Seasoning, on both sides; set aside.

  2. Light charcoal grill and coals get hot and a good flame is burning.  Arrange coals to one side of the grill.  

  3. Clean grill rack before putting on the fire and spray with PAM spray.  Let the coals continue to heat.  

  4. Add hickory wood chips on flame side of the grill.

  5. Place fillets on the low heat side of the grill.  Cook the salmon fillets 4 minutes/side for MEDIUM; 6 minutes/side for WELL DONE.

  6. Remove from grill and place cooked salmon on flat pan; brush butter and lemon juice on the fillets.
