Rich Yellow Layer Cake 

Ingredients

Cake:

  • 4 tablespoons unsalted butter

  • ½ cup vegetable oil

  • 1½ cup granulated sugar

  • 6 large egg yolks

  • 1 tablespoon vanilla extract

  • 3 cups Cake flour, sifted

  • 1 tablespoon baking powder

  • 1 teaspoon salt

  • 1 cup half & half

Easy Chocolate Frosting:

  • ½ cup butter or margarine

  • 2/3 cups cocoa

  • 3 cups powdered sugar

  • 1/3 cup whole milk

  • 1 teaspoon vanilla extract

Directions

Cake:

  1. Preheat oven to 350°.  Lightly butter and flour two 8-inch cake pans. 

  2. Pour butter, oil and sugar in mixing bowl and cream until smooth, 4-5 minutes.

  3. Add egg yolks, two at a time, beating 20 seconds after each addition; scrape down batter from bowl. 

  4. Beat in vanilla until combined; scrape down bowl again. 

  5. In a separate bowl, whisk together flour, baking powder, and salt; add dry ingredients to butter mixture in thirds, alternating with half & half.

  6. Beat 45 seconds after each addition and begin and end with dry ingredient; scrape down bowl to combine well. 

  7. Divide batter between pans and smooth surfaces. 

  8. Bake 30-35 minutes or until done. Remove cake pans to wire racks and cool for 10 minutes. 

  9. Turn layers onto racks to cool completely; add frosting to cake.

Easy Chocolate Frosting:

  1. Melt butter; stir in cocoa. 

  2. Alternately add sugar and milk, beating on medium speed to a smooth consistency. 

  3. Add more milk if needed; add vanilla.
