
Rich Yellow Layer Cake
Ingredients
Cake:

4 tablespoons unsalted butter
-
½ cup vegetable oil
-
1½ cup granulated sugar
-
6 large egg yolks
-
1 tablespoon vanilla extract
-
3 cups Cake flour, sifted
-
1 tablespoon baking powder
-
1 teaspoon salt
-
1 cup half & half
Easy Chocolate Frosting:
-
½ cup butter or margarine
-
2/3 cups cocoa
-
3 cups powdered sugar
-
1/3 cup whole milk
-
1 teaspoon vanilla extract

Directions
Cake:
-
Preheat oven to 350°. Lightly butter and flour two 8-inch cake pans.

Pour butter, oil and sugar in mixing bowl and cream until smooth, 4-5 minutes.

Add egg yolks, two at a time, beating 20 seconds after each addition; scrape down batter from bowl.

Beat in vanilla until combined; scrape down bowl again.

In a separate bowl, whisk together flour, baking powder, and salt; add dry ingredients to butter mixture in thirds, alternating with half & half.

Beat 45 seconds after each addition and begin and end with dry ingredient; scrape down bowl to combine well.

Divide batter between pans and smooth surfaces.

Bake 30-35 minutes or until done. Remove cake pans to wire racks and cool for 10 minutes.

Turn layers onto racks to cool completely; add frosting to cake.

Easy Chocolate Frosting:

Melt butter; stir in cocoa.

Alternately add sugar and milk, beating on medium speed to a smooth consistency.

Add more milk if needed; add vanilla.
