
Lemon Blueberry Muffins
Ingredients

2 cups AP flour

¾ cup granulated sugar

2 teaspoon baking powder
-
½ teaspoon salt
-
¼ teaspoon ground cinnamon

1 cup whole milk
-
¼ cup vegetable oil
-
2 tablespoons fresh lemon juice
-
1 egg white
-
1 teaspoon grated lemon zest
-
1 teaspoon vanilla extract
-
1 1/3 cup fresh blueberries

Directions

Preheat oven to 375°.

In large bowl, combine flour, sugar, baking powder, salt and cinnamon.

In second bowl, mix together remaining ingredients except blueberries and cooking spray.

Pour milk mixture into flour mixture and stir just until all ingredients are moistened.

Gently fold in blueberries. Spoon batter into muffin tins sprayed with PAM.

Bake for 20-25 minutes or until golden brown.

Optional Sugar Glaze:
Combine 1 cup powdered sugar, 1/2 teaspoon lemon extract and 1 teaspoon water in small bowl; stir to mix well. Drizzle over muffins while the muffins are still warm.
