
Homemade Carrot Cake
Ingredients
Cake:

2 cups All-Purpose flour

1 teaspoon vanilla extract

2 cups granulated sugar

1 cup pecans, chopped

2 teaspoons baking soda
-
2 teaspoons ground cinnamon

1 teaspoon salt
-
1 cup vegetable oil
-
1 cup golden raisins
-
4 large eggs
-
3 cups carrots, shredded
Cake Frosting:
-
½ cup margarine, softened
-
1 pound powdered sugar
-
8 ounce package of cream cheese, softened
-
1 teaspoon vanilla extract
-
1 cup pecans, chopped finely
Directions
Cake:​

Preheat oven to 350°. Grease and flour two 8-inch cake pans or a tube pan.

Sift dry ingredients together in a large mixing bowl.

Add oil and mix well; add eggs, one at a time. Beat until thoroughly mixed.

Add carrots, vanilla, nuts and raisins; mix well.

bake 30-35 minutes or until done for cake pans; for a tube pan, bake 50-60 minutes until done.

Cool on rack 10 minutes then turn it out of the pan.

Cake Frosting:

Mix all ingredients together.

Spread on the top and sides of cooled cake.
