Homemade Carrot Cake

Ingredients

Cake:

  • 2 cups All-Purpose flour        

  • 1 teaspoon vanilla extract

  • 2 cups granulated sugar            

  • 1 cup pecans, chopped

  • 2 teaspoons baking soda    

  • 2 teaspoons ground cinnamon

  • 1 teaspoon salt            

  • 1 cup vegetable oil

  • 1 cup golden raisins        

  • 4 large eggs

  • 3 cups carrots, shredded

Cake Frosting:

  • ½ cup margarine, softened

  • 1 pound powdered sugar

  • 8 ounce package of cream cheese, softened

  • 1 teaspoon vanilla extract

  • 1 cup pecans, chopped finely

Directions

Cake:​

  1. Preheat oven to 350°.  Grease and flour two 8-inch cake pans or a tube pan.

  2. Sift dry ingredients together in a large mixing bowl. 

  3. Add oil and mix well; add eggs, one at a time.  Beat until thoroughly mixed. 

  4. Add carrots, vanilla, nuts and raisins; mix well. 

  5. bake 30-35 minutes or until done for cake pans; for a tube pan, bake 50-60 minutes until done.

  6. Cool on rack 10 minutes then turn it out of the pan.

Cake Frosting:

  1. Mix all ingredients together.

  2. Spread on the top and sides of cooled cake.
