Southern Hush Puppies

Ingredients

  • 1 cup yellow cornmeal

  • 1/2 cup All-Purpose flour

  • 1/2 teaspoon salt

  • 1 teaspoon granulated sugar

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 2-3 tablespoons grated onion or 2 tablespoons of garlic powder

  • 1 large egg

  • 1 cup buttermilk

  • dash cayenne pepper, optional

  • 2 quarts vegetable oil

NOTE:

  • If using self-rising cornmeal and flour, omit the baking powder and salt.

  • Heat an oven to 200 F.   Move drained hush puppies to a rack in a baking pan and put them in the preheated oven until serving time (up to 20 minutes).

Directions

  1. In a mixing bowl, combine cornmeal with flour, salt, sugar, baking powder and baking soda.

  2. In another bowl, whisk the egg with the buttermilk.

  3. Blend the buttermilk mixture into the dry ingredients. The dough should be thick enough to drop from a spoon slowly but easily.

  4. Add onion and cayenne pepper.

  5. In a deep fryer or heavy skillet, heat oil to 370 degrees.   The oil should be deep enough for the hush puppies to float.

  6. Drop the batter by teaspoonfuls into the hot oil and fry until golden brown.

  7. Remove the hush puppies to paper towels to drain and keep warm while frying the rest.
