
Evelyn's Smashed Potatoes
Ingredients

3 pounds mediums red potatoes

1 ½ cups extra sharp cheddar cheese, shredded

2 tablespoons extra virgin olive oil

1 tablespoon unsalted butter

1 tablespoon Tony Chachere's More Spice Seasoning

1 teaspoon ground black pepper

1 teaspoon dried basil
-
1 teaspoon dried parsley flakes

Directions

Clean potatoes and pat dry. Set potatoes on microwaveable plate.

Cook until tender, about 7-8 minutes. Remove from microwave and set aside.

In a large skillet, heat olive oil and butter.

Place potatoes in skillet; using a potato masher, flatten potatoes until thin.

Sprinkle seasonings on potatoes and cook 5-6 minutes until crisp.

Turn potatoes over and cook for another 3-4 minutes.

Sprinkle cheese over potatoes, cover skillet with lid for 2-3 minutes until cheese has melted.

Remove potatoes and set on a plate.
