Evelyn's Smashed Potatoes

Ingredients

  • 3 pounds mediums red potatoes

  • 1 ½ cups extra sharp cheddar cheese, shredded

  • 2 tablespoons extra virgin olive oil

  • 1 tablespoon unsalted butter

  • 1 tablespoon Tony Chachere's More Spice Seasoning

  • 1 teaspoon ground black pepper

  • 1 teaspoon dried basil

  • 1 teaspoon dried parsley flakes

Directions

  1. Clean potatoes and pat dry.  Set potatoes on microwaveable plate.

  2. Cook until tender, about 7-8 minutes.  Remove from microwave and set aside.

  3. In a large skillet, heat olive oil and butter.

  4. Place potatoes in skillet; using a potato masher, flatten potatoes until thin.

  5. Sprinkle seasonings on potatoes and cook 5-6 minutes until crisp.

  6. Turn potatoes over and cook for another 3-4 minutes.

  7. Sprinkle cheese over potatoes, cover skillet with lid for 2-3 minutes until cheese has melted.

  8. Remove potatoes and set on a plate.
