Sour Cream Baked Potatoes
Ingredients

4 large baking potatoes

2 tablespoons unsalted butter

¾ cup sour cream
-
4 scallions, chopped
-
½ teaspoon salt
-
¼ teaspoon ground black pepper

¼ cup Parmesan cheese, grated

Directions

Preheat oven to 350°. Wash potatoes and pat dry.

Pierce potatoes with fork and place on flat sheet pan.

Bake potatoes 60-70 minutes. Remove from oven and cool 30 minutes.

Cut each potato in half lengthwise. Scoop out pulp, leaving ¼-inch of the pulp on the skin; set aside.

In mixing bowl, combine pulp, butter, sour cream, scallions, salt and pepper and cheese; beat until smooth.

Spoon mixture into shells and place in shallow baking dish.

Bake potatoes for 40-45 minutes or until hot and lightly browned.
