Sour Cream Baked Potatoes

Ingredients

  • 4 large baking potatoes

  • 2 tablespoons unsalted butter

  • ¾ cup sour cream

  • 4 scallions, chopped

  • ½ teaspoon salt

  • ¼ teaspoon ground black pepper

  • ¼ cup Parmesan cheese, grated

Directions

  1. Preheat oven to 350°.  Wash potatoes and pat dry.

  2. Pierce potatoes with fork and place on flat sheet pan.

  3. Bake potatoes 60-70 minutes.  Remove from oven and cool 30 minutes. 

  4. Cut each potato in half lengthwise.  Scoop out pulp, leaving ¼-inch of the pulp on the skin; set aside. 

  5. In mixing bowl, combine pulp, butter, sour cream, scallions, salt and pepper and cheese; beat until smooth. 

  6. Spoon mixture into shells and place in shallow baking dish.

  7. Bake potatoes for 40-45 minutes or until hot and lightly browned.
