Breakfast Granola Bars

Ingredients

  • 2 ½ cups old fashioned rolled oats

  • ¼ cup unsalted almonds, chopped

  • ¼ cup sunflower seeds, seeded & lightly salted

  • ¼ cup honey

  • ¼ cup unsalted butter

  • 1/3 cup light brown sugar

  • 1 teaspoon vanilla extract

  • ¼ teaspoon kosher salt

  • ¼ cup golden raisins

  • ¼ cup shredded coconut

  • ¼ cup dried cranberries

Directions

  1. Preheat the oven to 350 degrees. Line a 9-inch square baking dish with parchment; spray lightly with PAM spray.

  2. Place oats and nuts on baking sheet and bake for 8-10 minutes until lightly toasted. Pour into a large bowl.

  3. Add honey, butter and brown sugar to a small saucepan. Cook on medium heat until butter melts and sugar dissolves, stirring occasionally.

  4. Remove from heat and stir in vanilla and salt.  Pour mixture over the oat and nut mixture; stir to combine.  Add remaining ingredients.

  5. Pour oat mixture in prepared pan.  Using a rubber spatula press the mixture into the pan.  Chill granola bars for 2 hours.

  6. Lift the bars from the pan using the edges of parchment paper and place them on a cutting board. Cut into squares.
