Terri's Meaty Chili w/Beans

Ingredients

  • 1 pound Ground Beef (93% lean)

  • 1 pound spicy ground Italian sausage

  • 1 box Carroll Shelby's Chili Kit

  • 1 small sweet onion, chopped

  • 8 ounces tomato sauce

  • 8 ounces beef broth (low sodium)

  • 2-14 ounce cans light red kidney beans

  • 1 tablespoon chili powder

  • 1 teaspoon red pepper flakes

  • 1 teaspoon cayenne pepper

  • 1 tablespoon Masa Flour*

  • 1/4 cup water

* If you prefer a soupier chili, then leave out the masa flour and water.

Directions

  1. Cook ground beef in a skillet; add onion and cook until done; drain grease from beef mixture.

  2. Cook Italian sausage in a separate skillet; add red pepper flakes, stir and cook until done; drain grease from sausage mixture.

  3. Pour both meats into a large pot; Pour the dry chili mix over meat mixture.  Stir to mix well.

  4. Add remaining ingredients except kidney beans, Masa flour and 1/4 cup water; stir to combine.  

  5. Turn stove temperature on low, cover pot and cook chili for 2 hours, stirring frequently.

  6. Add beans, stir and cover pot.  Cook another 1 hour, stirring frequently.  Mix Masa and 1/4 cup water tougher in small bowl; stir to mix well.

  7. Pour flour mixture in pot and stir chili.  Let simmer 15-20 minutes until chili starts to thicken.

  8. Serve with toppings, as desired.

Toppings:

  • red onions, diced

  • jalapeño peppers, seeded & diced

  • sour cream

  • shredded cheddar cheese
