Banana Nut Muffins

Ingredients

  • 2 cups AP flour        

  • ¼ cup granulated sugar

  • 1 tablespoon baking powder

  • ½ teaspoon salt

  • 1 cup whole milk

  • 1 egg, beaten

  • 1/3 cup vegetable oil

  • ¾ cup bananas, mashed

  • ½ cup walnuts, chopped

Directions

  1. Preheat oven to 400°.  Grease a 12-cup muffin pan.  

  2. Sift flour, sugar, baking powder and salt into a medium bowl; make a well in center.  

  3. Mix milk, egg, oil, banana and walnuts in a small bowl.  Pour mixture into well.  

  4. Mix batter just until moistened; do not over-mix. 

  5. Line the muffin pan with aluminum muffin tins and spoon batter into prepared muffin cups.  

  6. Bake until a toothpick inserted in center comes out clean or until muffins are golden brown, about 15 minutes. 

  7. Let cool 10 minutes before removing from pan.
