Cookies & Cream Bars
Ingredients

30 Oreo cookies

¼ cup unsalted butter, melted

4-8 ounce packages of plain cream cheese

1 cup granulated sugar
-
1 teaspoon vanilla extract

4 large eggs
-
20 Oreo cookies, chopped

Directions

Preheat oven to 350°.

Place 30 cookies in food processor; process 30-45 seconds or until finely ground; add butter; mix well.

Press onto bottom of 13x9-inch baking pan to make cookie crust.

Combine cream cheese, sugar and vanilla in mixer; mix until well combined; add eggs.

Gently stir in 1½ cup chopped cookies. Pour batter into crust.

Sprinkle remaining cookies over cheesecake batter.

Bake 40 minutes or until center is almost set. Cool; refrigerate 3 hours or overnight. Cut into squares.
