Cookies & Cream Bars

Ingredients

  • 30 Oreo cookies

  • ¼ cup unsalted butter, melted

  • 4-8 ounce packages of plain cream cheese

  • 1 cup granulated sugar

  • 1 teaspoon vanilla extract

  • 4 large eggs

  • 20 Oreo cookies, chopped

Directions

  1. Preheat oven to 350°. 

  2. Place 30 cookies in food processor; process 30-45 seconds or until finely ground; add butter; mix well. 

  3. Press onto bottom of 13x9-inch baking pan to make cookie crust. 

  4. Combine cream cheese, sugar and vanilla in mixer; mix until well combined; add eggs. 

  5. Gently stir in 1½ cup chopped cookies.  Pour batter into crust.

  6. Sprinkle remaining cookies over cheesecake batter. 

  7. Bake 40 minutes or until center is almost set.  Cool; refrigerate 3 hours or overnight.  Cut into squares.
