
Favorite Oatmeal Raisin Cookies
Ingredients

1 cup unsalted butter, softened

1 cup light brown sugar, packed

½ cup granulated sugar

2 extra large eggs
-
1 teaspoon vanilla extract
-
1½ cups All-Purpose flour
-
1 teaspoon baking soda
-
1 teaspoon ground cinnamon
-
½ teaspoon salt
-
3 cups quick oats
-
1 cup golden raisins
-
1 cup walnuts, chopped (optional)

Directions

Heat oven to 350°.

Combine flour, baking soda, cinnamon and salt in a medium bowl; whisk until mix well.

Beat together butter and sugars until creamy.

Add eggs and vanilla; beat well; add flour mixture.

Stir in oats and raisins; mix well.

Drop by rounded tablespoonful onto un-greased cookie sheet.

Bake 10-12 minutes or until golden brown.

Cool 1 minute on cookie sheet. Remove to wire rack.

Oatmeal Raisin Bars:
-
Prepare cookie dough as directed.

Substitute 1½ cups of chopped pecans instead of walnuts; add to dough and stir to mix well.

Pour cookie dough into an un-greased 13x9-inch metal baking pan and bake for 30-35 minutes or until golden brown.

Remove from oven and let cool and wire rack.

Cut cookie into bars and remove from pan to cool on wire rack.
