Favorite Oatmeal Raisin Cookies 

Ingredients

  • 1 cup unsalted butter, softened

  • 1 cup light brown sugar, packed

  • ½ cup granulated sugar

  • 2 extra large eggs

  • 1 teaspoon vanilla extract

  • 1½ cups All-Purpose flour

  • 1 teaspoon baking soda

  • 1 teaspoon ground cinnamon

  • ½ teaspoon salt

  • 3 cups quick oats

  • 1 cup golden raisins

  • 1 cup walnuts, chopped (optional)

Directions

  1. Heat oven to 350°.

  2. Combine flour, baking soda, cinnamon and salt in a medium bowl; whisk until mix well.

  3. Beat together butter and sugars until creamy. 

  4. Add eggs and vanilla; beat well; add flour mixture. 

  5. Stir in oats and raisins; mix well.

  6. Drop by rounded tablespoonful onto un-greased cookie sheet.

  7. Bake 10-12 minutes or until golden brown. 

  8. Cool 1 minute on cookie sheet.  Remove to wire rack.

Oatmeal Raisin Bars:

  1. Prepare cookie dough as directed. 

  2. Substitute 1½ cups of chopped pecans instead of walnuts; add to dough and stir to mix well.

  3. Pour cookie dough into an un-greased 13x9-inch metal baking pan and bake for 30-35 minutes or until golden brown. 

  4. Remove from oven and let cool and wire rack. 

  5. Cut cookie into bars and remove from pan to cool on wire rack.
