
Southern Chicken & Waffles
Ingredients
Waffle:

4 cups all-purpose flour

1 tablespoon plus 1 teaspoon baking powder

1 teaspoon salt
-
1 tablespoon granulated sugar

6 eggs, separated
-
2 sticks unsalted butter, melted
-
1½ cups whole milk
-
1¾ cups buttermilk

Chicken Wings:
-
2 pounds whole chicken wings, cleaned & pat dry
-
4 cups AP flour
-
1 tablespoon seasoning salt
-
1/2 tablespoon ground black pepper
-
1 teaspoon onion powder
-
1 teaspoon garlic powder
-
4 quarts canola oil

Directions
​Waffles:

Sift together flour, baking powder and salt; add the sugar.

Beat egg yolks; add butter, milk and buttermilk.

Beat the egg whites separately until stiff.

Add milk mixture to dry ingredients and mix until just combined; fold in egg whites.

Preheat and grease waffle iron**. Pour enough batter to cover the center of the iron surface. Cook 5 minutes or until golden brown.

Chicken Wings:
1. In a large bowl, combine flour and all the seasonings; mix well.
2. Dredge wings into flour mixture making sure to coat the wings thoroughly; let wings rest on a flat pan for 5 minutes.
3. Heat oil to 325 degrees in a deep fryer. Place wings, a few pieces at a time, into the hot oil.
4. Cook 8-10 minutes or until golden brown; drain on paper towel. Fry remaining wings and serve with waffles.

**Any type of waffle iron can be used.
