Butter Cake w/Lemon Icing

Ingredients

Cake:

  • 2¼ cups Cake flour, sifted

  • 2½ teaspoons baking powder

  • 1 teaspoon salt

  • ½ cup unsalted butter

  • 1¼ cup granulated sugar

  • 2 large eggs

  • 2/3 cups whole milk

  • 2 teaspoons vanilla extract

Lemon Icing:

  • 1 cup confectioner’s sugar

  • ¼ cup lemon juice

  • 1 tablespoon whole milk

Directions

Cake:

  1. Preheat oven to 350°. Grease and flour an 8-inch loaf pan.

  2. Stir together cake flour, baking powder and salt in a large bowl; set aside. 

  3. Mix butter and sugar until light and fluffy. 

  4. Add the eggs, one at a time, mixing well after each addition.

  5. Add milk and vanilla alternately with flour mixture, mixing well after each addition;

  6. Pour batter into prepared pan; bake 35-40 minutes.

  7. Cool 10 minutes.  Remove from pan; cool completely.

Lemon Icing:

  1. Stir together all ingredients in a small bowl until sugar mixture thickens. 

  2. Pour over the cake.
