
Butter Cake w/Lemon Icing
Ingredients
Cake:

2¼ cups Cake flour, sifted

2½ teaspoons baking powder

1 teaspoon salt
-
½ cup unsalted butter
-
1¼ cup granulated sugar
-
2 large eggs
-
2/3 cups whole milk
-
2 teaspoons vanilla extract
Lemon Icing:
-
1 cup confectioner’s sugar
-
¼ cup lemon juice
-
1 tablespoon whole milk

Directions
Cake:

Preheat oven to 350°. Grease and flour an 8-inch loaf pan.

Stir together cake flour, baking powder and salt in a large bowl; set aside.

Mix butter and sugar until light and fluffy.

Add the eggs, one at a time, mixing well after each addition.

Add milk and vanilla alternately with flour mixture, mixing well after each addition;

Pour batter into prepared pan; bake 35-40 minutes.

Cool 10 minutes. Remove from pan; cool completely.

Lemon Icing:

Stir together all ingredients in a small bowl until sugar mixture thickens.

Pour over the cake.
