Evelyn's Baked Yams

Ingredients

  • 4 large sweet potatoes

  • 4 tablespoons unsalted butter, sliced

  • 2 teaspoons vanilla extract

  • 2 teaspoons lemon extract

  • 2 teaspoons ground nutmeg

  • 2 teaspoons ground cinnamon

  • 1 teaspoon ground allspice

  • 1 cup maple syrup

  • 1 cup granulated sugar

  • ½ cup light brown sugar

Directions

  1. Boil potatoes until tender; let cool completely.  Remove skin and cut lengthwise; set aside.

  2. Preheat oven to 350°.  In a large bowl, combine both sugars together; add spices to sugar mixture; stir and set aside. 

  3. Grease a 13x9-inch casserole pan.  Create a bottom layer of yams in pan; sprinkle sugar mixture over yams.

  4. Slice 2 tablespoons of butter and spread over yams. 

  5. Add 1 teaspoon each of vanilla and lemon extract. Drizzle ½ cup of syrup over yams; repeat layers until all of the potatoes are gone.

  6. Use remaining butter and syrup on top. 

  7. Bake uncovered for 45-55 minutes.  Remove and let cool.
