
Evelyn's Baked Yams
Ingredients

4 large sweet potatoes

4 tablespoons unsalted butter, sliced

2 teaspoons vanilla extract

2 teaspoons lemon extract

2 teaspoons ground nutmeg

2 teaspoons ground cinnamon

1 teaspoon ground allspice

1 cup maple syrup

1 cup granulated sugar

½ cup light brown sugar

Directions

Boil potatoes until tender; let cool completely. Remove skin and cut lengthwise; set aside.

Preheat oven to 350°. In a large bowl, combine both sugars together; add spices to sugar mixture; stir and set aside.

Grease a 13x9-inch casserole pan. Create a bottom layer of yams in pan; sprinkle sugar mixture over yams.

Slice 2 tablespoons of butter and spread over yams.

Add 1 teaspoon each of vanilla and lemon extract. Drizzle ½ cup of syrup over yams; repeat layers until all of the potatoes are gone.

Use remaining butter and syrup on top.

Bake uncovered for 45-55 minutes. Remove and let cool.
