Chicken Tenders w/Honey Mustard

Ingredients

  • 5 pounds chicken tenders

  • 2 eggs, beaten

  • 2 tablespoons seasoning salt

  • 2 cups seasoned breadcrumbs

  • 3 cups all purpose flour

  • 1 teaspoon poultry seasoning

  • ½ teaspoon black pepper

  • 2 quarts canola oil

  • 1/4 cup honey

  • 4 tablespoons yellow mustard

  • 1/4 teaspoon cayenne pepper

Directions

  1. In a small bowl, combine honey, yellow mustard and cayenne pepper; stir to mix well, set aside.

  2. Season tenders with seasoning salt; place in egg mixture and let set.

  3. In a shallow bowl, combine flour, poultry seasoning and black pepper; stir to mix.

  4. Take tenders from egg mixture, one at a time, and dredge into the flour; coat evenly.

  5. Pour breadcrumbs into another shallow bowl; coat the tenders evenly with the breadcrumbs.

  6. Heat oil to 275°; cook tenders a little at a time until golden brown, 6-8 minutes. 

  7. Remove from oil and soak in honey mustard mixture for 1-2 minutes; set tenders on plate.
