
Chicken Tenders w/Honey Mustard
Ingredients

5 pounds chicken tenders

2 eggs, beaten

2 tablespoons seasoning salt

2 cups seasoned breadcrumbs

3 cups all purpose flour

1 teaspoon poultry seasoning

½ teaspoon black pepper

2 quarts canola oil
-
1/4 cup honey
-
4 tablespoons yellow mustard

1/4 teaspoon cayenne pepper

Directions

In a small bowl, combine honey, yellow mustard and cayenne pepper; stir to mix well, set aside.

Season tenders with seasoning salt; place in egg mixture and let set.

In a shallow bowl, combine flour, poultry seasoning and black pepper; stir to mix.

Take tenders from egg mixture, one at a time, and dredge into the flour; coat evenly.

Pour breadcrumbs into another shallow bowl; coat the tenders evenly with the breadcrumbs.

Heat oil to 275°; cook tenders a little at a time until golden brown, 6-8 minutes.

Remove from oil and soak in honey mustard mixture for 1-2 minutes; set tenders on plate.
